Spaghetti Mushrooms & Shrimps With Fresh Burrata

Burrata is a fresh cheese coming from Italy. It is made of fresh mozzarella and cream.
10 big shrimps or 20 small ones without shells, deveined
100g sliced fresh mushrooms
a pinch of parsley
4 garlic cloves, chopped
2 tablespoons of soy sauce
2 teaspoons of olive oil
1/2 teaspoon of salt
1/4 teaspoon of pepper
2 cups cooked pasta water (optional)

Fry garlic in a pan with very hot olive oil, add the sliced mushrooms. Once the mushrooms are softened you can add shrimps.

Meanwhile, prepare the spaghetti in a pot with plenty of boiling water and rock salt.

Sauté the shrimps in the pan together with mushrooms, parsley and garlic, add soy sauce to help color the shrimps and adjust the flavor.

When the spaghetti are “al dente” (a minute or two before the right cooking time), drain the spaghetti and keep two cups of the cooking water.

Pour the spaghetti into the pan over high heat and, in two minutes in which we will continually stir the content of the pan, we will add a little cooking water until the spaghetti are well mixed with the sauce but not wet.

We serve and add, once at the table, a fresh "Ottima” burrata on the plate. The burrata will be sectioned, added of olive oil, salt and pepper and distributed on this delicate dish, completing it in an unusual way.
