Specifications: Bleu d'Auvergne, a cheese made with cow's milk and aged for at least a month and a half, is one of the most famous "Blue cheeses". The presence of molds with a typical bluish-green color is a sign of the activity of Penicillum roqueforti. The consistency of this cheese is creamy, buttery. The rind is moist and the flavors and aromas of this cheese range from salty to pungent, with notes of pepper, spices, and herbs.
Perfect to complement salads, pasta dishes, or spread on toasted hot bread, it is perfect when paired with both sweet wines (riesling and sauvignon) and robust reds.
